Snow in April? Wow.

Good evening, yogis!

I am sitting here in amazement that the week of Easter, in April, which also happens to be my birthday week, is also a snow day. Seriously? Wow. Spring where are you? 

I have one recipe to share and it's also something I posted on Instagram yesterday. Drumroll please for the goat cheese, tomato, & caramelized onion tart.

Goat cheese, tomato, & caramelized onion tart! 

1 pie crust 

12 grape or cherry tomatoes sliced in half

2 sweet onions (roughly chopped)

2 tbsp butter 

3/4 heavy whipping cream

4 eggs

salt & pepper

4oz soft goat cheese

3/4 cup of parmesan 

Prepare the piecrust as instructed on the box and let it cool. 

Cook the onions in the butter until they are golden. You can always add a heavy dash of sugar to sweeten them if you want. Let those cool. Whisk the eggs and cream, add in the salt and pepper. Add in the parmesan. 

Layer the bottom of the crust with the onions. Top that with the tomatoes. Pour the egg mixture on top. Add drops of goat cheese all over the top. 

Bake in the oven at 350 for 35-40 minutes or until lightly golden on top.
