Happy National (Healthy) Deviled Egg Day!

With the holidays quickly approaching, it's time to start gathering some great recipes that you can use for parties and holiday dinners with the family. Deviled eggs, a crowd favorite, are not only full of protein, but also have the potential to be a really healthy appetizer or side! Clean, green deviled eggs:


12 eggs – hard boiled

1 medium avocado

¼ cup plain greek yogurt

1 tbsp mustard

½  tsp cumin

Juice of ½ lime

Salt and pepper

Chili powder

Optional: diced peppers, tomato


Slice the hard boiled eggs in half lengthwise, keeping the whites intact. Place the yolks in a bowl. Mash the avocado and mix with the cooked egg yolks. Add your greek yogurt, mustard, cumin, lime juice, and salt and pepper to taste. If you prefer, you can add diced peppers or tomatoes to the mixture at this point. With a spoon or piping bag, fill each egg white with the avocado/yolk mixture. Sprinkle with chili powder and serve cold.
