National Pecan Cookie Day!
Happy Pecan Cookie Day! Tomorrow is the first day of fall and what better way to prepare than by baking a delicious fall cookie recipe? These pecan cookies are warm, chewy, and spicy – and we make them extra autumn-y by adding some pumpkin to the mix. Because #PumpkinEverything.

Pumpkin Pecan Cookies
1 stick of butter
1 tsp vanilla extract
½ cup pumpkin puree
2 ½ cups all-purpose flour (you can split all purpose and whole grain flour for a healthier twist)
1 cup of dark brown sugar
1 tsp baking soda
Pecans (I prefer just a handful or two, but you can add more to make your cookies more chunky. You can also use salted, unsalted, spiced, or sweetened pecans depending on your preferences!)
Using a hand or stand mixer, mix the butter, egg, pumpkin puree, vanilla, and sugar until well mixed and creamy. Add the flour, spices, and baking soda and continue to mix until all ingredients are combined. Lastly, add the pecans and combine evenly with the dough. Refrigerate dough for at least 1-2 hours until well chilled. Scoop dough onto cookie sheet leaving each spoonful about 1 inch apart. Bake at 350 degrees for 8-10 minutes or until golden brown.
