Almost Fall! Acorn Squash Recipes

Fall is almost here! I know it is still early, but it seems like everyone can’t wait for that first leaf to turn. To get into that fall spirit, the IW team has collected 3 of our favorite Acorn Squash recipes for National Acorn Squash Day!

1.       Acorn Squash Soup – Vitamix

This comforting soup is a super healthy dinner or side (that can also be reheated for lunch leftovers!). Pair it with a chunk of artisan bread or some roasted seeds.

2.       Baked Acorn Squash (topped with Chili) – She Likes Food

This is one of my favorite ways to eat acorn squash. Feel free to use your favorite chili recipe or make a swap for vegetarian or vegan chili!

3.       Crispy Acorn Squash Rounds – How Sweet It Is

Try this healthier take on onion rings for your next tailgate party or as an appetizer for your next game night! You can pair these with a chipotle mayo or sweet and tangy dipping sauce.
